By default DTC autodetects disk usage for sector dumps as that is the preferred behavour.

Yes, it was often used to track duplication; it's the first unused track on a disk, e.g. 80.0 on double sided 80 tracks disk.
You can force DTC to stop processing those tracks by setting the endtrack in the example case as -e79

Don't forget you can dump to as many formats as you like at the same time - the disk will only ever be read once. You can change the output from the tool and restrict it to format errors only by setting the output level, e.g. -l8 will only ever display format decoding errors - useful for sector dump...

There is no difference whatsoever dumping any kind of sector size - it's exactly the same data read and the hardware does not read sectors, only flux transitions.

Normal sector dumps used by emulators and tools are only capable of holding only a fixed sector size. DTC defaults to using the "expected" values normally and warns the user when the disk cannot be represented with the selected format. I'd recommend using drives going to 83 (ie supporting 84 tracks; 0-83) for preservation/stream files.
For normal user written disks it does not matter much usually.

The *N is a warning. It means that the sector size found is different from what the selected image type expects as default.
Try changing it with the -z command, or you can just post a track (usually 00.0 should be fine) and I can take a look and tell the correct parameters.
